Mom's Menu | 6/6-6/11
I told ya'll I was gonna get back into the swing of things!
I'm getting back to cooking/preparing super healthy meals...vegetarian, some vegan...ALL delicious and filling. I promise! Eat as large of portions as you want! Fill yourself! It's ALL good for you!
I'm going to set this week's meal plan up a little different and see how it works out.
Usually, I break it up into a listing of 6 days with 3 meals in each.
If you're a regular reader of my blog you know what I mean....let me know what you think of this week's setup, okay?
Here we go!
Pineapple juice (from a can), bananas, frozen mango, frozen strawberries and spinach...I am also looking into getting a wheat grass powder to add in also, but so far I don't have any.
(with local honey and possibly fruit)
Large mixed greens salads
(organic spring mix, avocado and corn)
(black beans, corn, avocado and salsa mixed together and wrapped up in Romaine lettuce leaves...like burritos)\
But my little boys will probably opt to eat pb&j sandwiches, per usual
Southwestern Cauliflower Rice Bowls
(I'm just going to put raw cauliflower into my food processor and pulse until it resembles rice and then put it in individual bowls and top with avocado, cooked and seasoned black & pinto beans, corn and taco sauce)
Veggie Burgers with honey mustard roasted potatoes
(just going to chop some potatoes, roll in flour then in honey mustard and roast until done)
(zucchini, yellow squash, cannelini beans, green beans, diced potatoes in vegetable broth)
Stir fry veggies with brown sauce and lo mein
(we're trying my homemade pizza crust with NO cheese but topped with pizza sauce, corn, zucchini, onion, banana pepper, green pepper and spinach)
And then somewhere in there, Antonio and I will probably have a Date Night
::cue cheesy romantic music...or, ya know...me drunk in an Applebees...whatevah::
