Mom's Menu 5/9-5/14
This week's menu is focused mainly on laziness being easy.
I tried to cut corners whenever possible when making this week's meal plan because I'm just not feeling the hustle and bustle of spending hours in the kitchen this week.
And...because I was pretty spoiled this past weekend (yay for Mothers Day!!), I didn't end up cooking a few nights last week, so you'll see a couple of dinners repeated. Also, I've realized that we've been eating out/getting take out on either Friday or Saturday lately, so I'm not going to bother planning a dinner on one of the nights. Maybe you can convince your partner to bring you home some dinner, too. ::wink:: Also, salads are getting to be a regular thing for lunch...I'm really, really, really loving these huge mixed green salads. I'll usually just use (organic) mixed greens, an avocado and croutons/crispy tortilla strips with dressing to make my lunch salads.
And I'm making cauliflower rice AGAIN this week!! That stuff is so GOOD! You'll find the recipe link in last week's Mom's Menu.
