Mom's Menu | 5/2-5/7


Iiiit's MONDAY, yo!!

Time to do something that we're all dreading: thinking about the age old question of...

WHAT'S FOR DINNER?!

Well, my actual day of wondering was yesterday when I pieced together yet another weekly menu, so, lucky for you, I have some delicious ideas for YOUR weekly menu, too!

All of my recipes this week are vegetarian and pretty darn healthy!

All dinners will come with a mixed greens salad for anyone who wants one.

DAY 1

Breakfast
English muffins

Lunch
Mixed Green Salads with hardboiled egg

Dinner
Due to grocery-shopping technical difficulties, Antonio will be bringing home dinner.

DAY 2

Breakfast
Blueberry & Banana Smoothies
(just frozen blueberries, bananas and rice milk)

Lunch
Veggie Pizza Lettuce Wraps
(Amazon didn't bring me my food processor on the expected day, so I wasn't able to make these last week)
