Roasted Tomato-Herb Sauce

Okay, seriously, this sauce is so easy and tastes so good, you'll never want to go back to store bought sauce again! Everything tastes so fresh and it is so good for your body! Healthy is sexy!
Makes about 3 cups
Nonstick cooking spray
2.5 pounds tomatoes, cut into wedges
1 large onion, cut into wedges
2 medium carrots, cut into small pieces
4 cloves fresh garlic, peeled
1/2 tsp dried oregano
1/4 tsp dried marjoram
1/8 tsp pepper
Salt, to taste
Preheat oven to 425°
Spray cookie sheet with nonstick spray (I just used nonstick foil...I love that stuff!).
Arrange vegetables in a single layer.
Sprinkle with oregano, marjoram and pepper. Try to roll/rub the spices in your hands, to break them up, releasing their flavor & aroma.
Place in the oven and roast for about 40 minutes. They should look slightly blackened around the edges. This is normal.
Place all of the roasted vegetables and spices into your blender with a little bit of water.
Blend away! Taste test (after you turn your blender off, silly) to see if you want to add salt.
Use however you would normally use pasta sauce!
