Menu Monday (wk of Feb 24, 2014)

So, yeah, today is actually Wednesday not Monday. But you moms know that you've got to be flexible, right? ;-) I've been trying to stay diligent to my workouts and keep motivated to get in shape....which is starting to challenge me a bit. It's a mind game, yo! ;-) Your mind tells your body to just give up because all of your hard work and persistence isn't getting you anywhere. So I looked at progress pictures that I've been taking every week & am blown away by my results!! I am losing inches and it SHOWS! I've been playing with my weekly menu, trying to keep the fat content low while adding in more protein since I'm weight training. Not heavy weights....but a journey starts with a single step, right?! :-D

Okay, folks, that's enough chit chat! Here's my weekly menu! This is the menu for my whole family but I adjust it for what I actually eat. For example, I don't drink the breakfast juices and smoothies. I have a cup of coffee and egg whites, if I'm making eggs that morning. I also always try to measure out a single serving size, so that I'm not overeating. I also typically don't eat my chicken and egg salads on bread.


Breakfast: Orange-Carrot Juice & Eggs

Lunch: Green Juice & Chicken Salad

Dinner: Taco Casserole with pinto beans


Breakfast: Raspberry Oatmeal Smoothie

Lunch: Strawberry Milk"shake" & grilled cheese sandwich

Dinner: Chicken burritos & Fiesta-style roasted vegetables


Breakfast: Banana-Strawberry Smoothie

Lunch: Bean & corn wrap

Dinner: Curried Sweet Potato & Lentil stew with biscuits (maybe biscuits...if I'm not too tired to make them LOL)


Breakfast: Apple Spinach Juice & Eggs

Lunch: Banana milk with egg salad

Dinner: Slow Cooker Marinara Sauce with whole wheat pasta & breadsticks


Breakfast: Peanut Butter Banana Smoothie

Lunch: Green Juice with either grilled cheese or egg salad

Dinner: Sloppy Joe Calzones (I didn't make them last week)
